Producing Sandalera, the flagship of these fortified draws upon traditional European techniques. The base for this wine is the Sherry variety grape, Pedro Ximinez. After ripening to super sugar levels on the vine the fruit is hand harvested, fortified and cellared for up to 25 years. Careful blending then yields this engaging, luscious wine with one of the most distinguished trophy medal records in the history of Western Australian winemaking.
Rich, raisined rancio characters highlight this unique sweet white dessert wine The richness suggested in the bouquet becomes obvious on the palate, and is the product of sun ripened Swan Valley grapes harvested at optimum maturity. The resultant wines are given extended maturation in old oak barrels to achieve an even greater degree of richness and complexity, before final blending and bottling

Only the best super ripe fruit from warm to hot growing regions is utilized. After crushing and pressing, the raw juice is inoculated with selected yeast. Once that initial ferment is underway, the wine is fortified with premium grape spirit. The wine is then transferred to old French Oak barriques for 5 to 10 years on average. Blending with minimal filtration then takes place prior to bottling. Dark chocolate with hints of tawny and garnet. The nose displays very ripe jammy fruit characters with spicy notes and floral muscaty influences. On the palate the warm alcohol spirit is beautifully balanced with luscious sweet fruit flavors. A delicious dessert wine.
